  • 4 cups all-purpose flour
  • 2 tbsp soy sauce
  • 6 cups vegetable broth
  • 1 tsp garlic powder
  • 2 tsp onion powder

Instructions

  1. In a large mixing bowl, combine the all-purpose flour and water to form a shaggy dough.
  2. Knead the dough on a clean surface for 8 to 10 minutes until smooth and elastic.
  3. Place the dough in a bowl of water and let it rest for 1 to 2 hours.
  4. Squeeze and rinse the dough underwater repeatedly to remove excess starch until the dough is elastic and beige.
  5. Shape the dough into a braid or knot and place it in the seasoned broth.
  6. Simmer the braid in the broth for about 1 hour, flipping halfway through.
  7. Cool the dough in the broth before shredding it apart with two forks.
  8. Store any leftovers in the broth for up to 7 days or freeze for later use.
