  • 2 lbs carrots (peeled and sliced diagonally, or use baby carrots)
  • 3 tbsp honey
  • 2 tbsp unsalted butter, melted
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • Optional: pinch of cinnamon or nutmeg for spiced version
  • Optional: 1 tsp Dijon mustard for honey mustard glaze
  • Fresh parsley or thyme, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Peel and cut carrots diagonally into 1/2-inch slices, or use baby carrots. Rinse and pat dry.
  3. In a bowl, whisk melted butter, honey, olive oil, salt, pepper, thyme, and optional seasonings. Add Dijon mustard for a tangy variation.
  4. Toss carrots in the honey mixture until fully coated.
  5. Spread carrots in a single layer on the baking sheet. Roast for 25–30 minutes, tossing halfway through, until tender and caramelized.
  6. Transfer to a serving dish, drizzle with glaze, and garnish with parsley or thyme. Serve warm and enjoy!

Notes

  • This recipe works for both weeknight dinners and holiday feasts.
  • Adjust the sweetness by adding more or less honey.
  • For a spiced version, add cinnamon or nutmeg.
