- 2 lbs carrots (peeled and sliced diagonally, or use baby carrots)
- 3 tbsp honey
- 2 tbsp unsalted butter, melted
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
- Optional: pinch of cinnamon or nutmeg for spiced version
- Optional: 1 tsp Dijon mustard for honey mustard glaze
- Fresh parsley or thyme, for garnish
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- Peel and cut carrots diagonally into 1/2-inch slices, or use baby carrots. Rinse and pat dry.
- In a bowl, whisk melted butter, honey, olive oil, salt, pepper, thyme, and optional seasonings. Add Dijon mustard for a tangy variation.
- Toss carrots in the honey mixture until fully coated.
- Spread carrots in a single layer on the baking sheet. Roast for 25–30 minutes, tossing halfway through, until tender and caramelized.
- Transfer to a serving dish, drizzle with glaze, and garnish with parsley or thyme. Serve warm and enjoy!
