These herb spinach lasagna roll-ups are a delicious vegetarian twist on traditional lasagna, made with creamy ricotta, fresh herbs, spinach, and topped with rich marinara and melted mozzarella cheese. Perfect for a cozy family dinner or meal prep.

  • 10 lasagna noodles
  • 2 cups marinara sauce
  • 2 cups whole milk ricotta cheese
  • 1 cup frozen spinach (thawed and excess water squeezed out)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 garlic cloves (minced)
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 1 1/2 cups shredded mozzarella cheese
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Cook lasagna noodles according to package instructions until al dente, then drain and lay flat on parchment paper to cool.
  2. In a mixing bowl, combine ricotta cheese, thawed spinach, Parmesan, egg, garlic, basil, parsley, oregano, salt, and pepper. Mix until well combined.
  3. Spread a thin layer of marinara sauce over the bottom of a 9×13 inch baking dish.
  4. Spread about 2 tablespoons of the ricotta mixture over each lasagna noodle, then carefully roll up each noodle.
  5. Place the roll-ups seam-side down in the baking dish. Spoon remaining marinara sauce over the roll-ups and sprinkle with shredded mozzarella.
  6. Cover the dish with foil and bake for 20 minutes. Remove foil and bake uncovered for another 10 minutes until cheese is bubbly and golden.
  7. Garnish with fresh chopped parsley if desired. Serve warm.
