1 medium onion, chopped
6 cloves garlic, peeled
1 bell pepper, chopped
1 scotch bonnet pepper (optional for spice)
½ bunch cilantro, chopped
2 sprigs fresh thyme
1 tablespoon parsley
1 tablespoon fresh lime juice
2 tablespoons olive oil
Salt, to taste
1 cup water (or more for desired consistency)
Instructions
Chop the onion, garlic, bell pepper, and scotch bonnet pepper (wear gloves for handling the scotch bonnet). Prepare the cilantro and thyme.
Place all ingredients (onion, garlic, bell pepper, scotch bonnet, cilantro, thyme, parsley) into a blender or food processor. Add the lime juice, olive oil, and a pinch of salt.
Add water gradually to help blend the mixture into a smooth paste. Continue blending until the paste is smooth and combined. Adjust the consistency with more water as needed.
Taste the paste and adjust the seasoning with more salt or lime juice if needed. If it’s too thick, add more water or oil.
Transfer the paste to an airtight container and store it in the fridge for up to 2 weeks. Use it as a marinade for meats, seasoning for Haitian Rice and Beans, or as a base for soups.
