A mashup of two comfort food classics, this Grilled Cheese Burrito combines seasoned beef, fluffy rice, and melted cheese in a crispy tortilla for a satisfying meal.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • Butter or oil for grilling
  • Optional: Avocado slices, fresh cilantro, green onions, jalapeños

Instructions

  1. Cook the beef in a large skillet over medium heat for 8-10 minutes, drain excess grease, add taco seasoning and water, and let simmer for 5 minutes.
  2. Warm the tortillas in a skillet or microwave for about 20 seconds.
  3. Assemble the burrito with rice, seasoned beef, nacho cheese sauce, chipotle sauce, sour cream, and shredded cheeses.
  4. Grill the burrito seam-side down in a skillet over medium heat with butter or oil, adding cheese to the skillet for a crispy crust.
  5. Cook for 3-4 minutes per side until golden and crispy.

Notes
