Green Goddess Kombucha is a refreshing fermented drink packed with probiotics. This recipe combines the creaminess of avocado and yogurt with fresh herbs, making it a great addition to salads or as a dip.

  • 3/4 cup unflavored kombucha
  • 1/2 ripe avocado
  • 1/4 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh herbs (dill, parsley, chives)
  • 1 small cucumber, peeled and seeded, roughly chopped
  • 1 small garlic clove, minced
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon salt
  • 1/16 teaspoon white pepper
  • 1 teaspoon tahini (optional for extra creaminess)
  • 1 teaspoon maple syrup (optional)

Instructions

  1. In a high-speed blender, combine the avocado, cucumber, fresh herbs, garlic, yogurt (if using), lemon juice, kombucha, and olive oil. Blend on high until the mixture is luxuriously smooth and green, about 45–60 seconds.
  2. Pause to scrape down the sides, then blend again for another 15–20 seconds. If the mixture is too thick for your liking, add a tablespoon of kombucha at a time until you reach your desired consistency.
  3. Season with salt and pepper, then taste. If you want more brightness, add an extra teaspoon of lemon juice; if you crave more herb-forward punch, toss in an extra tablespoon of chopped herbs.
  4. Blend once more to integrate flavors, then transfer to a jar or small bottle. For optimal flavor melding, refrigerate for at least 30 minutes before using.
  5. Serve over salads or bowls, or use as a dip for vegetables and gluten-free crackers. If you’re using it as a sauce for grain bowls, drizzle generously over warm quinoa or roasted veggies.
  6. Storage note: Keep Green Goddess Kombucha refrigerated in an airtight container for up to 4 days. If the texture thickens, whisk in a teaspoon of water or a splash more kombucha to loosen.
