1 cup (240 ml) Greek yogurt
1 cup (200 g) granulated sugar
1/2 cup (120 ml) vegetable oil or melted coconut oil
2 large eggs
1 tsp vanilla extract
1/2 cup (50 g) unsweetened cocoa powder
1 cup (125 g) all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
Instructions
Preheat your oven to 350°F (175°C).
Line an 8×8-inch baking pan with parchment paper, allowing overhang.
Lightly grease the sides of the pan with oil.
In a large bowl, mix Greek yogurt, sugar, and vegetable oil until smooth.
Add eggs one at a time, whisking well after each, then add vanilla.
In another bowl, sift cocoa powder, flour, baking powder, and salt.
Fold the dry mixture into the wet ingredients until no flour streaks remain.
Pour the batter into the prepared pan and spread it evenly.
Bake for 25-30 minutes until a toothpick comes out with a few moist crumbs.
Cool the brownies in the pan for about 10 minutes before transferring them.
Cut the cooled brownies into squares with a sharp knife.
