Ingredients

  • 1 pound chicken breast, diced
  • 2 cups spinach (or your choice of greens)
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 4 tablespoons olive oil
  • 1 cup feta cheese, crumbled
  • 1 package ready-made puff pastry
  • Salt and pepper to taste
  • A sprinkle of dried oregano (or fresh, if available)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a pan, heat olive oil over medium heat. Add onion and garlic, cooking until fragrant.
  3. Add chicken and cook until browned. Stir in spinach until wilted; season with salt, pepper, and oregano.
  4. Roll out puff pastry on a floured surface and cut to fit your baking dish.
  5. Place the cooked filling into the pastry-lined dish, crumble feta cheese on top, and cover with another layer of pastry.
  6. Seal the edges and make small slits on top for ventilation.
  7. Bake for 30-35 minutes, or until the crust is golden brown and flaky.
