Ghost Pumpkin Cookies: Spooky & Delicious Halloween Treats. Soft and chewy pumpkin cookies with chocolate chips, perfectly spiced, and optionally decorated as cute ghosts.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • 1 cup canned pumpkin puree
  • 1 cup semi-sweet chocolate chips
  • ½ cup chopped pecans or walnuts (optional)
  • White chocolate chips (for decorating, optional)
  • Black food coloring gel (for decorating, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in the vanilla. Scrape down the bowl.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Stir in pumpkin puree, chocolate chips, and nuts (if using).
  7. Drop rounded tablespoons of dough onto prepared baking sheets, leaving 2 inches between cookies.
  8. Bake for 10-12 minutes, or until edges are golden brown and centers are slightly soft.
  9. Remove from oven and let cool on sheets for a few minutes before transferring to a wire rack to cool completely.
  10. Once cool, melt white chocolate chips. Drizzle melted white chocolate over cookies to create a ghostly effect.
  11. Add tiny dots of black food coloring gel for eyes and mouth while chocolate is wet. Let set before serving.

  • Don’t overmix the batter to prevent tough cookies.
