6 bone-in, skin-on chicken thighs
2 tablespoons olive oil
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
4 cloves garlic, minced
1 teaspoon paprika
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C).
Pat chicken thighs dry with paper towels and season both sides generously with salt and pepper.
In a small bowl, mix olive oil, chopped rosemary, thyme, minced garlic, and paprika.
Rub the herb mixture all over the chicken thighs, including under the skin where possible.
Place the chicken thighs skin-side down in a large oven-safe skillet or cast iron pan.
Sear over medium heat for 5-7 minutes until skin is golden brown and crispy.
Flip the chicken thighs skin-side up and transfer the skillet to the preheated oven.
Roast for 20-25 minutes or until internal temperature reaches 165°F (74°C).
