  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1.5 tsp instant coffee granules
  • 24 tbsp heavy whipping cream
  • 1/3 cup unsalted butter (for frosting)
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F and prepare an 8-inch baking dish with non-stick spray or parchment paper.
  2. Melt 1 stick of unsalted butter in a microwave-safe bowl.
  3. In a large bowl, mix the melted butter, sugar, eggs, and vanilla extract until smooth.
  4. Stir in cocoa powder, flour, salt, and baking powder until just combined. Optionally, add ½ tsp espresso powder for enhanced flavor.
  5. Spread the batter evenly into the prepared pan and bake for 30–35 minutes, until a toothpick comes out with moist crumbs.
  6. Allow brownies to cool completely.
  7. For the frosting, dissolve the instant coffee in 2 tbsp heavy cream and set aside.
  8. In another bowl, beat 1/3 cup butter until fluffy.
  9. Gradually add powdered sugar, mixing well.
  10. Add the coffee-cream mixture and beat until creamy, adding more cream 1 tbsp at a time if needed.
  11. Spread frosting evenly over cooled brownies.
  12. Cut into squares and serve.
