This moist and spiced eggnog bread is the perfect holiday treat—easy to bake, rich in flavor, and ideal for breakfast, dessert, or gifting.

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • Optional: 1 tsp rum extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1/4 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 3.4 oz french vanilla instant pudding mix
  • 1 cup eggnog

Instructions

  1. Preheat oven to 350°F and grease two 8×4” loaf pans.
  2. In a stand mixer or bowl with hand mixer, cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each. Stir in vanilla and optional rum extract.
  4. In a separate bowl, whisk together flour, salt, baking powder, cinnamon, nutmeg, and pudding mix.
  5. With mixer on low, alternate adding the dry mixture and eggnog to the wet ingredients, starting and ending with dry.
  6. Divide the batter between the prepared pans and smooth the tops.
  7. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool in pans for 10–15 minutes, then transfer to a wire rack to cool completely.
