1 large head of cauliflower (or approximately 6 cups of cauliflower florets)
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk (whole or 2%)
1 cup heavy cream
1½ cups grated cheese (cheddar, Gruyère, or a mix of both)
Salt and pepper, to taste
1 teaspoon garlic powder (optional)
Fresh parsley for garnish
Breadcrumbs (optional)

Instructions
Preheat your oven to 375°F (190°C). Trim the cauliflower, removing the leaves, and cut the head into florets. You can opt for a whole cauliflower, cutting it after baking for a more rustic presentation.
Blanch the cauliflower in salted boiling water for 3-5 minutes, then drain and set aside.
In a medium saucepan, melt the butter, add the flour, and whisk to make a roux. Gradually add the milk and cream, stirring to avoid lumps. Once thickened, stir in the grated cheese, and season with salt, pepper, and garlic powder.
Transfer the cauliflower to a baking dish. Pour the cheese sauce over the cauliflower, ensuring it’s evenly coated. Add breadcrumbs and more cheese if desired for an extra crispy topping.
Bake for 20-25 minutes, until the top is golden brown and bubbling. Garnish with fresh parsley before serving.
