1 tablespoon olive oil
1 medium onion, finely diced
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon mild curry powder
1/2 teaspoon ground turmeric (optional)
1 large head cauliflower, florets cut into bite-size pieces
3 cups vegetable broth (or chicken broth if not vegetarian)
1 cup coconut milk (full-fat for extra silk)

Instructions
Heat the olive oil in a heavy-bottomed pot over medium heat. Add the onion and cook until translucent and fragrant, about 5–7 minutes.
Add the garlic and grated ginger; cook for another 1–2 minutes, until the garlic is fragrant but not browned.
Stir in the curry powder and turmeric, if using. Toast for 30 seconds to bloom the spices, then pour in the cauliflower and broth. Scrape up any brown bits from the bottom of the pot.
Bring to a gentle boil, then reduce to a simmer. Cook until the cauliflower is very tender, about 15–20 minutes.
Blend the soup until silky smooth using an immersion blender right in the pot, or carefully transfer to a countertop blender in batches. If you prefer a bit of texture, blend until mostly smooth with a few soft cauliflower pieces left.
Return the blended soup to the pot (if needed), stir in the coconut milk, and simmer for 3–5 minutes more. Taste and adjust salt and pepper. If the soup is too thick, whisk in a splash of broth or water.
Remove from heat and ladle into bowls. Serve hot with a squeeze of lime and toppings such as chopped cilantro, a pinch of chili flakes, and a swirl of coconut milk.
Storage tip: Cool completely and refrigerate for up to 4 days, or freeze for up to 2 months. Reheat gently, adding a splash of broth if needed to restore the smooth texture.
Notes
For extra flavor, add lime juice before serving.
Adjust spice levels by adding more or less curry powder.
