Ingredients

Scale
  • 2 lbs (900 g) beef chuck roast
  • 1 cup (240 ml) pineapple juice
  • 1 cup (240 ml) soy sauce
  • 1/4 cup (60 ml) honey or agave syrup
  • 2 cloves garlic
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 cup bell peppers
  • 1 cup onion

Instructions

  1. Prepare the beef by cutting it into 1-inch pieces for even cooking.
  2. Season the beef pieces lightly with salt and black pepper.
  3. In a bowl, combine pineapple juice, soy sauce, honey, and minced garlic.
  4. Whisk the ingredients together until well blended to create a sauce.
  5. If desired, mix cornstarch with water and add it to the sauce for thickness.
  6. Layer seasoned beef in the crockpot, distributing it evenly.
  7. Pour the pineapple sauce over the beef, coating each piece.
  8. Add sliced bell peppers and onions on top for color and flavor.
  9. Cover the crockpot and set it to cook on low for 6-8 hours.
  10. Check the beef for tenderness; it should be fork-tender and falling apart.
  11. For a thicker sauce, cook on high for an additional 15-20 minutes.
  12. Serve the beef over rice or noodles, garnished with fresh herbs.
