Crispy lemon garlic chicken spaghetti is a dish featuring tender pasta and juicy chicken infused with garlic and lemon.

  • 8 oz spaghetti
  • 2 boneless chicken thighs
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 teaspoon red pepper flakes
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water

Instructions

  1. Prepare the marinade by combining garlic, lemon juice, zest, olive oil, paprika, salt, and pepper.
  2. Whisk the marinade until well blended and fragrant.
  3. Place chicken thighs in a zip-top bag or shallow dish and pour marinade over them.
  4. Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 2 hours.
  5. Heat a large skillet over medium-high heat and add a drizzle of olive oil.
  6. Cook marinated chicken thighs for 5-7 minutes on each side until golden brown.
  7. Ensure chicken reaches an internal temperature of 165°F (74°C).
  8. Remove chicken from skillet and let it rest on a cutting board for a few minutes.
  9. In the same skillet, add more olive oil if needed and toss in cooked spaghetti.
  10. Drizzle additional lemon juice and zest over the spaghetti and stir gently.
  11. Add sliced chicken on top of the spaghetti and toss gently to combine.
  12. Transfer to a serving platter, garnish with parsley, and serve with lemon wedges.
