Crispy black bean tacos topped with melty cheese, bursting with flavor and perfect for both busy nights and leisurely weekends.

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 8 corn tortillas
  • 1 cup shredded pepper jack cheese (or vegan cheese)
  • 2 tbsp vegetable oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mash black beans in a bowl until mostly smooth, then mix in cumin, chili powder, salt, and pepper.
  3. Spoon black bean filling onto half of each corn tortilla and sprinkle with cheese.
  4. Fold each tortilla to form a taco.
  5. Place tacos on a baking sheet with space between them.
  6. Brush the tops lightly with vegetable oil.
  7. Bake for 20 minutes, flipping halfway, until crispy and golden brown.
  8. Serve warm and enjoy with toppings of your choice.
