1 lb ground chicken
1 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 cup sliced mushrooms
1 cup heavy cream
1 cup chicken broth
2 tbsp olive oil
1/2 tsp thyme
1/2 tsp parsley
Instructions
In a large bowl, mix together the ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper until well combined. Form into meatballs.
Heat olive oil in a skillet over medium heat. Brown the meatballs on all sides for about 5-7 minutes, then set aside.
In the same skillet, sauté the sliced mushrooms until soft.
Stir in the chicken broth, heavy cream, thyme, and parsley, and bring to a gentle simmer.
Return the meatballs to the skillet and cook for another 10-15 minutes until cooked through.
