  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced

  • 1/2 tsp black pepper
  • 1 cup sliced mushrooms
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1/2 tsp thyme
  • 1/2 tsp parsley

Instructions

  1. In a large bowl, mix together the ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper until well combined. Form into meatballs.
  2. Heat olive oil in a skillet over medium heat. Brown the meatballs on all sides for about 5-7 minutes, then set aside.
  3. In the same skillet, sauté the sliced mushrooms until soft.
  4. Stir in the chicken broth, heavy cream, thyme, and parsley, and bring to a gentle simmer.
  5. Return the meatballs to the skillet and cook for another 10-15 minutes until cooked through.
