1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon paprika
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tablespoon fresh thyme leaves
Salt and pepper to taste
4 large potatoes, peeled and quartered
4 tablespoons butter
Instructions
Start by placing your quartered potatoes in a large pot and covering them with cold, salted water. Bring the water to a boil and cook the potatoes until they’re fork-tender, about 15-20 minutes. Drain and set aside.
Once the potatoes are drained, return them to the pot and add the butter, salt, and pepper. Mash until creamy and smooth, keeping some texture. Keep warm over low heat.
In a large skillet over medium heat, add the olive oil. Once hot, toss in the shrimp, seasoned with paprika, salt, and pepper. Cook until they turn pink, about 3-4 minutes.
Once the shrimp are done, add the minced garlic and sauté for another minute.
Pour in the heavy cream and stir in the Parmesan cheese and thyme. Keep stirring until the sauce thickens slightly, about 2-3 minutes.
Scoop mashed potatoes onto plates. Top with shrimp and ladle the creamy garlic sauce over the top. Garnish with extra thyme or paprika.
