  • 8 oz (1 block) cream cheese, softened
  • 4 oz goat cheese (optional, for tangier flavor)
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup toasted pecans, chopped
  • 2 tbsp green onions, chopped
  • 1 tbsp honey
  • Salt and pepper to taste
  • Optional: 1 tsp orange zest
  • Optional: 1/4 tsp cinnamon
  • Optional: fresh rosemary

Instructions

  1. In a medium bowl, beat softened cream cheese and goat cheese until smooth and fluffy. Stir in green onions, honey, salt, and pepper.
  2. Lay a sheet of plastic wrap on your counter. Spoon the cheese mixture into the center and shape it into a log. Wrap tightly and refrigerate for at least 2 hours until firm.
  3. Spread chopped cranberries and toasted pecans on a plate. Unwrap the chilled cheese log and roll it gently in the mixture, pressing lightly so the coating sticks evenly.
  4. Place the coated cheese log on a serving plate. Garnish with extra cranberries, honey drizzle, or herbs. Serve with crackers, pretzel chips, or apple slices.
