  • ½ cup (120g) cottage cheese
  • ½ ripe banana (about 60g)
  • 2 large eggs
  • ¼ teaspoon ground cinnamon (optional)
  • ½ teaspoon vanilla extract (optional)
  • Butter or oil for cooking (such as coconut or avocado oil)

Instructions

  1. In a mixing bowl, mash the banana until smooth.
  2. Add cottage cheese and eggs. Stir well until combined. For a smoother texture, blend the mixture using a blender.
  3. Mix in cinnamon and vanilla extract, if using.
  4. Heat a non-stick skillet over medium heat and lightly grease it with butter or oil. Spoon about 2 tablespoons of batter per pancake onto the skillet.
  5. Cook for 2–3 minutes on one side, then flip and cook another 1–2 minutes until golden and cooked through.
