Crispy, golden-brown cottage cheese chips, surprisingly easy to make and perfect for dipping. A delicious appetizer or snack.

  • 2 cups (450g) low-fat cottage cheese, drained very well
  • 1 large egg, lightly beaten
  • 1/2 cup (60g) all-purpose flour
  • 1/4 cup (30g) grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup (60ml) olive oil, for frying
  • Optional: 1/4 cup finely chopped fresh herbs (parsley, chives, or dill)
  • Optional: Pinch of red pepper flakes

Instructions

  1. Drain cottage cheese exceptionally well. Press it in cheesecloth or a fine-mesh sieve for at least 15-20 minutes to remove excess whey.
  2. In a large bowl, gently combine drained cottage cheese, beaten egg, flour, Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper. Add optional herbs and red pepper flakes. Mix thoroughly but carefully; avoid overmixing.
  3. Let the mixture rest for 10-15 minutes to allow flour to absorb moisture.
  4. Heat olive oil in a large, non-stick skillet over medium heat. Oil should be hot enough to sizzle a pinch of mixture immediately.
  5. Drop spoonfuls of mixture into hot oil, avoiding overcrowding. Flatten each spoonful slightly with the back of a spoon.
  6. Fry for 2-3 minutes per side, or until golden brown and crispy. Flip carefully with a spatula.
  7. Remove cooked chips and place on a wire rack or paper towel-lined plate to drain excess oil.
  8. Continue frying remaining mixture in batches.

Notes

  • For a healthier option, bake chips at 400°F (200°C) for 15-20 minutes, flipping halfway through. Baked chips may be less crispy.
  • Store leftover chips in an airtight container at room temperature for up to 2 days, but they are best enjoyed fresh.
  • Experiment with different herbs, spices, and cheeses (adjust flour accordingly).
