  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups mixed vegetables (e.g., green beans, peas, corn)
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh herbs for garnish (e.g., parsley or cilantro)
  • Bread for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until softened.
  3. Stir in the garlic and cook for another minute until fragrant.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add mixed vegetables, thyme, and basil.
  6. Reduce heat and simmer for 15-20 minutes.
  7. Stir in the heavy cream or coconut milk, and season with salt and pepper.
  8. Cook for another 5 minutes.
  9. Serve warm, garnished with fresh herbs and with bread on the side.
