  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 2 carrots, diced

  • 1/2 tsp dried oregano
  • 4 cups chicken broth
  • 1.5 lbs Yukon Gold potatoes, peeled and cubed
  • 1 cup heavy cream
  • Salt to taste

  • Fresh parsley, chopped, for garnish

Instructions

  1. Brown the Italian sausage in a large pot or Dutch oven over medium-high heat, breaking it apart with a spoon. Once cooked, remove the sausage with a slotted spoon and set it aside.
  2. If there is more than a tablespoon of grease from the sausage, drain the excess. Add the olive oil to the pot and sauté the diced onion, carrots, and celery until they begin to soften, about 5-7 minutes.
  3. Stir in the minced garlic, dried basil, and dried oregano, and cook for another minute until fragrant.
  4. Pour in the chicken broth and add the cubed potatoes. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.
  5. Reduce the heat to low and stir in the heavy cream and the cooked sausage. Let it heat through gently, but do not let it boil.
  6. Season with salt and pepper to your liking. Serve hot, garnished with fresh parsley.
