- 2 lbs (900g) flank or skirt steak
- 1 large onion, thinly sliced
- 1 bell pepper (red or green), chopped
- 3 cloves garlic, minced
- 2 large tomatoes, chopped
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp dried oregano
- Salt and black pepper, to taste
- 2 tbsp vegetable oil
- 4 cups water or beef broth (for boiling)
- Fresh cilantro, for garnish (optional)
- In a large pot, add steak and cover with water or broth. Bring to a boil, reduce heat, and simmer 1.5–2 hours until tender. Remove and cool slightly.
- Using two forks, shred the cooked beef into thin strands. Set aside.
- Heat oil in a skillet over medium heat. Add onion, garlic, and bell pepper; cook 5–7 minutes until softened.
- Stir in chopped tomatoes, tomato paste, cumin, oregano, salt, and pepper. Simmer until thickened.
- Add shredded beef to the sauce. Stir well and cook uncovered for 10–15 minutes to absorb flavors.
- Garnish with cilantro and serve hot with rice, arepas, or fried plantains.
