Juicy & Flavorful Carne Desmechada: The Best Colombian Pulled Beef

  • 2 lbs (900g) flank or skirt steak
  • 1 large onion, thinly sliced
  • 1 bell pepper (red or green), chopped
  • 3 cloves garlic, minced
  • 2 large tomatoes, chopped
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • 2 tbsp vegetable oil
  • 4 cups water or beef broth (for boiling)
  • Fresh cilantro, for garnish (optional)

Instructions

  1. In a large pot, add steak and cover with water or broth. Bring to a boil, reduce heat, and simmer 1.5–2 hours until tender. Remove and cool slightly.
  2. Using two forks, shred the cooked beef into thin strands. Set aside.
  3. Heat oil in a skillet over medium heat. Add onion, garlic, and bell pepper; cook 5–7 minutes until softened.
  4. Stir in chopped tomatoes, tomato paste, cumin, oregano, salt, and pepper. Simmer until thickened.
  5. Add shredded beef to the sauce. Stir well and cook uncovered for 10–15 minutes to absorb flavors.
  6. Garnish with cilantro and serve hot with rice, arepas, or fried plantains.
