These Coffee Sugar Cookies are a delightful treat that combines the buttery crispness of a traditional sugar cookie with the rich aroma and flavor of espresso. They are easy to make, perfect for any occasion, and can be customized with various additions.

Ingredients

Scale
  • 1 cup (226 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ½ cups (300 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons instant espresso powder (or finely ground coffee)
  • Optional: ½ teaspoon cinnamon or ½ cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the softened butter and granulated sugar together until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and instant espresso powder.
  5. Gradually stir the dry ingredients into the wet ingredients until a cohesive dough forms.
  6. Shape the dough into 1-inch balls or use a cookie scoop, and place them on the prepared baking sheets, flattening them slightly.
  7. Bake for 10–12 minutes, or until the edges are golden brown.
  8. Allow the cookies to rest on the baking sheets for 2 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a stronger coffee flavor, use high-quality espresso powder.
  • Chill the dough for 15–20 minutes before baking for thicker cookies.
  • Add a pinch of cinnamon or nutmeg for extra warmth.
  • Drizzle with an espresso glaze made from powdered sugar, milk, and espresso powder for an elegant finish.
  • Fold in mini chocolate chips for a mocha variation.
