Instructions
In a bowl, combine chocolate cookie crumbs and melted butter. Stir until evenly mixed.
Press the mixture firmly into a 9-inch pie dish to form the crust. Chill in the refrigerator while preparing the filling.
In a large bowl, beat softened cream cheese until smooth. Add sweetened condensed milk, instant coffee, and vanilla extract. Beat until well combined and creamy.
Gently fold in the whipped topping using a spatula until the filling is light and fluffy.
Spoon the mixture into the chilled crust and smooth the top with a spatula.
Refrigerate for at least 4 hours, or overnight, until the pie is set and firm.
