  • 2 tablespoons instant coffee or espresso powder
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then incorporate the coffee powder and vanilla extract.
  4. In a separate bowl, whisk the flour, baking soda, and salt together.
  5. Gradually mix the dry ingredients into the wet mixture until just combined—no need to overmix!
  6. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them a few inches apart.
  7. Bake for 10-12 minutes or until the edges are beautifully golden.
  8. Allow the cookies to sit on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.
