Ingredients
Scale
226 grams unsalted butter, melted and cooled slightly
220 grams packed light brown sugar
100 grams granulated sugar
2 large eggs
2 teaspoons vanilla extract
180 grams all-purpose flour
2.5 milliliters baking powder
1.25 milliliters fine salt
1 tablespoon ground cinnamon
50 grams granulated sugar for cinnamon-sugar swirl
1 teaspoon ground cinnamon for swirl
Optional: 60 grams chopped pecans
Optional: 60 grams chopped walnuts
Optional: 85 grams semisweet chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until glossy and smooth.
Beat in the eggs one at a time, then stir in the vanilla.
In a separate bowl, whisk together the flour, baking powder, salt, and 1 tablespoon ground cinnamon. Add this dry mix to the wet mixture in two additions, folding just until combined.
Prepare the cinnamon-sugar swirl: mix the 50 grams granulated sugar with 1 teaspoon ground cinnamon in a small bowl. You’ll swirl this into the batter by dropping spoonfuls into the pan and then adding dollops of the cinnamon-sugar mixture, using a knife to swirl gently.
Spread the batter evenly in the prepared pan. Then sprinkle the cinnamon-sugar swirl over the top and, if you like, scatter optional nuts or chocolate chips for extra texture.
Bake for 25–30 minutes, until the edges are set and the center looks just set and slightly springy. A toothpick inserted into the center should come out with a few moist crumbs.
Let cool completely in the pan before slicing into squares. For sharper edges, refrigerate for 20–30 minutes before cutting.
Serve warm or at room temperature, and share the cozy Cinnamon Sugar Blondies with friends and family.
