1 cup (200 g) granulated sugar (fine or superfine)
1/4 teaspoon cream of tartar (or a pinch of salt)
1/2 teaspoon vanilla extract
Green gel food coloring (10–12 drops, or 1–2 teaspoons if you’re using paste)
Parchment paper or silicone mats for lining the baking sheets
Small candy stars, sugar crystals, or edible glitter for decoration (optional)
Piping bag with a small round or star tip
Instructions
Preheat your oven to 200°F (93°C) and line two baking sheets with parchment paper or silicone mats.
In a clean, grease-free mixer bowl, begin beating the egg whites on medium speed until foamy. Add the cream of tartar (or pinch of salt) and continue until soft peaks form.
Gradually add the granulated sugar, about a couple of tablespoons at a time, while raising the mixer speed. Wait for each addition to dissolve before adding the next. When you lift the whisk, the peaks should be glossy and stiff.
Beat in the vanilla extract, then tint the mixture with green gel coloring until you reach a vibrant, festive shade.
Spoon or pipe the meringue into a small tree shape on the prepared sheets. Start with a broad base, then stack upward with a tapered triangle, finishing with a tiny top like a star. If you’re new to piping, practice a couple of gentle lines on a scrap sheet first, then transfer to your baking sheet.
Bake for 1.5 to 2 hours, or until the cookies are completely dry to the touch and crisp outside. Do not brown them.
Turn off the oven and crack the door slightly, allowing the cookies to cool inside for another 30 minutes to an hour. After they’re cool, transfer to a wire rack to finish cooling completely.
Once cooled, decorate as desired with candy stars or edible glitter.
