Stuffing mix (your favorite brand or homemade)
Spinach (fresh or frozen, drained)
8 oz cream cheese
2 cloves garlic, minced
1 onion, chopped
Salt and pepper, to taste
Olive oil, for sautéing and roasting

Instructions
Preheat the oven to 400°F (200°C).
In a skillet, sauté chopped onions and garlic in olive oil until soft.
Add spinach and cook until wilted.
In a bowl, mix sautéed vegetables with cream cheese and stuffing mix; season with salt and pepper.
Slice the beef tenderloin lengthwise to create a pocket.
Stuff the mixture into the pocket of the beef.
Tie the tenderloin with cooking twine to hold the stuffing in place.
