  • 2 tsp baking powder
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon

  • 1 cup eggnog
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×5 inch loaf pan.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, nutmeg, cinnamon, and salt until well combined.
  3. In a separate bowl, whisk the eggnog, vegetable oil, eggs, and vanilla extract together until smooth.
  4. Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Fold in the pecans if using.
  5. Transfer the batter to the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, checking doneness with a toothpick inserted in the center.
  7. Let the bread cool in the pan for a few minutes before transferring it to a wire rack to cool completely before slicing.
