Chocolate rum balls are a rich, no-bake dessert made with crushed wafers, cocoa powder, powdered sugar, and a splash of rum.

  • 1/2 cup cocoa powder
  • 1 cup powdered sugar
  • 1/4 cup dark rum
  • 2 tbsp corn syrup or honey
  • 1 cup crushed pecans or walnuts
  • 1/2 cup desiccated coconut or sprinkles (for coating)

Instructions

  1. Crush the vanilla wafers into fine crumbs using a food processor or rolling pin.
  2. In a large bowl, combine cookie crumbs, cocoa powder, powdered sugar, and nuts.
  3. Add rum and corn syrup (or honey) to the dry mix. Stir until the mixture becomes moist and holds together when pressed.
  4. Roll about one tablespoon of the mixture between your palms to form small balls.
  5. Coat each ball in cocoa powder, coconut, or sprinkles.
  6. Place the balls on a parchment-lined tray and refrigerate for at least 2 hours before serving.
  7. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 2 months.

Notes

  • You can make them alcohol-free by omitting the rum.
