1 ½ cups Oreo crumbs (about 24 cookies)
6 tablespoons (85 g) butter (melted)
1 ¼ cups (300 ml) heavy cream
2 cups (12 oz) bittersweet chocolate (chopped)
1 teaspoon pure vanilla extract
2 pints (about 4 cups) fresh raspberries
Confectioners’ sugar for dusting
Instructions
Preheat your oven to 350°F (175°C). In a bowl, combine Oreo crumbs and melted butter. Mix until evenly coated. Press this mixture into the bottom and up the sides of a tart pan. Bake for about 10 minutes and let it cool.
In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add chopped chocolate and vanilla extract. Stir until smooth and glossy.
Pour the chocolate filling into the cooled Oreo crust and spread evenly. Refrigerate for at least 2 hours, or until set.
Once set, layer fresh raspberries on top and dust with confectioners’ sugar.
