  • 2 pounds chicken wings (separated into drums and flats; tips removed)
  • 1 large egg
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons garlic powder
  • ¼ teaspoon white pepper
  • 1 teaspoon oil
  • 2 tablespoons all-purpose flour
  • 2 tablespoons cornstarch
  • ½ teaspoon baking powder

Instructions

  1. In a large bowl, combine the chicken wings, egg, oyster sauce, soy sauce, garlic powder, white pepper, and oil. Mix until thoroughly coated and let marinate for at least 30 minutes.
  2. In a small bowl, whisk together the flour, cornstarch, and baking powder. Once the wings have marinated, add the dry mix and toss until evenly coated.
  3. Heat about 1 ½ inches of oil in a deep pan or fryer to 350°F. Deep-fry the wings in batches for about 3-4 minutes until golden brown and cooked through.
  4. Transfer the wings to a wire rack to drain excess oil. For extra crispiness, double-fry them at 400°F after allowing them to rest for 10 minutes.
