A warm, hearty Chicken Tortellini Soup that’s perfect for any chilly day, packed with chicken, tortellini, and fresh veggies.

  • 1 pound boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 package (about 9 ounces) cheese tortellini (fresh or frozen)
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cut chicken into bite-sized pieces; season with salt and pepper.
  2. In a large pot, heat olive oil over medium heat; sauté onion, carrots, and celery for about 5 minutes until tender.
  3. Add garlic; cook for 1 minute until fragrant.
  4. Pour in the chicken broth; add chicken, bay leaves, and thyme. Bring to a boil; reduce heat and simmer for 20 minutes.
  5. Stir in tortellini; cook according to package directions (about 5–7 minutes) until tender.
  6. Remove bay leaves; season to taste with salt and pepper. Stir in parsley.
  7. Serve hot, with extra parsley if desired.
