Ingredients

Scale
  • 1.5 lbs boneless skinless chicken breasts, cut into 1-inch pieces
  • 8 oz linguine
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook linguine according to package directions. Drain and set aside.
  2. While pasta cooks, season chicken pieces with salt and pepper.
  3. Melt butter in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add minced garlic to the skillet and cook until fragrant, about 1 minute.
  5. Pour in white wine or chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes until slightly reduced.
  6. Stir in heavy cream and bring to a gentle simmer. Cook for 3-5 minutes until the sauce thickens.
  7. Add Parmesan cheese and stir until melted and smooth.
  8. Return the cooked chicken to the skillet. Add the cooked linguine and toss to coat everything in the creamy garlic sauce.
  9. Stir in fresh parsley and lemon juice. Season with salt and pepper to taste.
  10. Serve immediately.

Notes

  • For a spicier kick, add a pinch of red pepper flakes with the garlic.
  • If you don’t have white wine, chicken broth works well as a substitute.
  • Ensure you don’t overcook the chicken to keep it tender.
  • For a lighter version, you can use half-and-half instead of heavy cream, but the sauce may be thinner.
