  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 pound chicken sausage (sliced)
  • 2 cups broccoli florets
  • 3 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. In a large pot over medium heat, heat the olive oil. Add the sliced chicken sausage and cook for 5–7 minutes until browned.
  2. Add the minced garlic and sauté for about 1 minute.
  3. Add the broccoli florets and cook for another 2–3 minutes.
  4. Stir in the orzo pasta, chicken broth, Italian seasoning, salt, and pepper. Bring to a gentle boil.
  5. Reduce heat and cover; let it simmer for 10–12 minutes, stirring occasionally.
  6. Remove from heat and stir in Parmesan cheese until melted.
  7. Scoot into bowls, sprinkle with fresh parsley, and serve hot.
