- 1 1/2 lb Springer Mountain Farms chicken breast
- 1 1/2 tsp paprika
- 1 1/2 tsp oregano
- 1 tsp garlic powder
- 1/2 tsp thyme
- 1/2 tsp black pepper
- 1/2 tsp salt
- 12 oz gluten-free farfalle pasta
- 4 tbsp butter
- 2 tsp dry shallots
- 2 tsp Italian seasoning
- 1/2 cup chicken broth
- 2 tbsp gluten-free 1:1 flour
- 3 cups heavy cream
- 12 oz shredded Parmesan
- 1/4 cup pasta water
- 1/2 tsp salt
- 1 tsp garlic powder
- Boil pasta according to the directions on the box for al dente texture.
- Mix the chicken seasonings in a small bowl: paprika, oregano, garlic powder, thyme, salt, and pepper.
- Pound the chicken to thin it out and season both sides with the mixed seasoning.
- Heat olive oil in a skillet and sear the chicken for 5 minutes on each side.
- Flip chicken, lower heat, cover, and cook until internal temperature hits 165°F (10-12 minutes). Transfer the chicken to a cutting board to rest.
- In the same skillet, melt butter, add shallots, garlic powder, and Italian seasoning; stir and simmer for 1 minute.
- Add flour, scrape bottom of the pan for flavor.
- Pour in chicken broth and heavy cream, whisk until smooth.
- Stir in Parmesan cheese, allowing it to melt and create a creamy sauce.
- Toss cooked pasta in the sauce, adding pasta water if needed for consistency.
- Slice rested chicken and add to pasta, stir carefully.
