  • 2 tbsp olive oil
  • 1 1/2 lb Springer Mountain Farms chicken breast
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 12 oz gluten-free farfalle pasta
  • 4 tbsp butter
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp gluten-free 1:1 flour
  • 3 cups heavy cream
  • 12 oz shredded Parmesan
  • 1/4 cup pasta water
  • 1/2 tsp salt
  • 1 tsp garlic powder

Instructions

  1. Boil pasta according to the directions on the box for al dente texture.
  2. Mix the chicken seasonings in a small bowl: paprika, oregano, garlic powder, thyme, salt, and pepper.
  3. Pound the chicken to thin it out and season both sides with the mixed seasoning.
  4. Heat olive oil in a skillet and sear the chicken for 5 minutes on each side.
  5. Flip chicken, lower heat, cover, and cook until internal temperature hits 165°F (10-12 minutes). Transfer the chicken to a cutting board to rest.
  6. In the same skillet, melt butter, add shallots, garlic powder, and Italian seasoning; stir and simmer for 1 minute.
  7. Add flour, scrape bottom of the pan for flavor.
  8. Pour in chicken broth and heavy cream, whisk until smooth.
  9. Stir in Parmesan cheese, allowing it to melt and create a creamy sauce.
  10. Toss cooked pasta in the sauce, adding pasta water if needed for consistency.
  11. Slice rested chicken and add to pasta, stir carefully.
  12. Serve hot and enjoy!
