1 lb ground beef (80/20)
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
4 large flour tortillas (8-inch)
1/2 medium onion, finely chopped
2 cloves garlic, minced
1 tbsp olive oil or canola oil
2 tsp taco seasoning
1/2 tsp salt
1/4 tsp black pepper
Optional: diced jalapeños, green onions, or cilantro for garnish
Instructions
Heat olive oil in a skillet over medium-high heat.
Add ground beef and cook until browned, breaking it up with a spatula.
Add chopped onions and minced garlic, sautéing until softened.
Stir in taco seasoning, salt, and pepper; add a splash of water and mix well.
Set the beef mixture aside to cool slightly.
Lay one tortilla flat and sprinkle a thin layer of cheese.
Spread a few spoonfuls of the beef mixture evenly, then top with more cheese.
Place another tortilla on top and press lightly to seal.
Heat a clean skillet or pan with a drizzle of oil over medium heat.
Cook the quesadilla 2–3 minutes per side until golden and crispy.
Remove from pan, rest for one minute, then cut into triangles and serve with dips.
