Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 lb broccoli florets
  • 8 oz uncooked pasta (like penne or rotini)
  • 2 tablespoons olive oil
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: 1/4 cup breadcrumbs for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook pasta according to package directions. Drain and set aside.
  3. In a large bowl, combine the chicken pieces, broccoli florets, olive oil, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
  4. Spread the chicken and broccoli mixture in a single layer on a baking sheet.
  5. Bake for 20-25 minutes, or until the chicken is cooked through and the broccoli is tender-crisp.
  6. While the chicken and broccoli are baking, prepare the cheese sauce. In a saucepan over medium heat, whisk together the milk and heavy cream.
  7. Gradually stir in the shredded cheddar cheese and Parmesan cheese until melted and smooth. Season with salt and pepper if needed.
  8. Add the cooked pasta to the cheese sauce and stir to combine.
  9. Add the baked chicken and broccoli to the pasta and cheese mixture. Stir gently to distribute everything evenly.
  10. Pour the mixture into a 9×13 inch baking dish.
  11. Optional: Sprinkle breadcrumbs over the top for a crispy crust.
  12. Bake for another 10-15 minutes, or until the casserole is bubbly and heated through.
  13. Let it rest for a few minutes before serving your cheesy baked chicken broccoli.

Notes

  • For a healthier option, use low-fat milk and a reduced-fat cheese blend.
  • You can add other vegetables like carrots or bell peppers.
  • If you prefer a creamier sauce, add an extra splash of milk or cream.
  • Ensure chicken is cooked through to avoid any pinkness.
