Creamy Cauliflower Mac and Cheese Weeknight Comfort Recipe

  • 1 cup whole milk (or unsweetened plant milk such as almond or oat)
  • 1 cup shredded sharp cheddar cheese (plus 23 tablespoons for finishing)
  • 2 ounces cream cheese (optional, for extra silkiness)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon ground nutmeg (optional)
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup gluten-free breadcrumbs (optional topping)
  • 1 teaspoon olive oil (optional topping)
  • 1/2 cup cooked bacon bits (optional add-in)
  • 1/2 cup sautéed mushrooms (optional add-in)
  • 1/2 cup chopped cooked broccoli (optional add-in)

Instructions

  1. Begin by steaming or microwaving the cauliflower florets until fork-tender, about 8–10 minutes.
  2. While the cauliflower cooks, melt the butter in a medium saucepan over medium heat. Whisk in the flour to form a pale, silky roux.
  3. Slowly whisk in the milk, maintaining a steady pace to avoid lumps. The mixture should thicken as it comes to a gentle simmer.
  4. Stir in the cream cheese (if using) and the Dijon, letting them melt into the sauce until silky. Then add the garlic powder, onion powder, and a pinch of nutmeg.
  5. Lower the heat and fold in the shredded cheddar cheese gradually, whisking until fully melted and smooth.
  6. Drain the cauliflower and transfer it to a blender or use an immersion blender to purée until very smooth.
  7. Combine the cauliflower purée with the cheese sauce and stir until fully integrated.
  8. Taste and season again if needed, then fold in the pre-cooked pasta or “noodles”.
  9. Transfer the Cauliflower Mac and Cheese to a baking dish if finishing with a crisp topping. Sprinkle with the breadcrumbs-tossed topping and bake at 375°F (190°C) for 8–12 minutes.
  10. Let the dish rest for a few minutes before serving.
