Ingredients
Scale
1 cup (120 g) all-purpose flour
1/4 cup (50 g) granulated sugar
1/4 cup (60 ml) vegetable oil
1/4 tsp salt
1/2 cup (120 g) ricotta cheese
1/4 cup (30 g) powdered sugar
1/2 tsp vanilla extract
1/4 cup (40 g) mini chocolate chips
Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, whisk together flour, sugar, and salt until blended.
Gradually mix in vegetable oil until the mixture resembles coarse crumbs.
Add cold water, just enough to bring the dough together.
Knead the dough gently on a floured surface for 2-3 minutes.
Wrap the dough in plastic wrap and let it rest for 30 minutes.
In a separate bowl, mix ricotta, powdered sugar, and vanilla until smooth.
Fold in mini chocolate chips if desired, then taste for sweetness.
Cover the filling with plastic wrap and refrigerate it.
Roll out the rested dough into a rectangle about 1/8 inch thick.
Transfer the rolled dough to a parchment-lined baking sheet and prick it.
Bake for 15-20 minutes until golden brown, then cool before assembling.
