  • 1 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg plus 1 egg yolk
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon peppermint extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon fine sea salt
  • 3/4 cup crushed candy cane pieces
  • 1 cup white chocolate chips or chunks (optional)

Instructions

  1. Cream butter and sugars until fluffy, about 2 to 3 minutes.
  2. Beat in the egg, egg yolk, vanilla, and peppermint extract until combined.
  3. Whisk flour, baking soda, baking powder, and salt in a separate bowl. Add to the wet ingredients and mix on low until almost no dry flour remains.
  4. Fold in candy cane bits and white chocolate chips. Do not overmix.
  5. Chill the dough for at least 30 minutes.
  6. Preheat oven to 350°F and line two sheet pans with parchment paper.
  7. Scoop dough into 1.5 tablespoon balls (or 3 tablespoons for bakery-style cookies).
  8. Bake for 9 to 11 minutes until the edges are set and the centers are slightly soft.
  9. Let cool on the sheet for 5 minutes, then transfer to a wire rack.
