- 1 cup unsalted butter, softened to room temperature
- 1 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 large egg plus 1 egg yolk
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon peppermint extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3/4 teaspoon fine sea salt
- 3/4 cup crushed candy cane pieces
- 1 cup white chocolate chips or chunks (optional)
- Cream butter and sugars until fluffy, about 2 to 3 minutes.
- Beat in the egg, egg yolk, vanilla, and peppermint extract until combined.
- Whisk flour, baking soda, baking powder, and salt in a separate bowl. Add to the wet ingredients and mix on low until almost no dry flour remains.
- Fold in candy cane bits and white chocolate chips. Do not overmix.
- Chill the dough for at least 30 minutes.
- Preheat oven to 350°F and line two sheet pans with parchment paper.
- Scoop dough into 1.5 tablespoon balls (or 3 tablespoons for bakery-style cookies).
- Bake for 9 to 11 minutes until the edges are set and the centers are slightly soft.
- Let cool on the sheet for 5 minutes, then transfer to a wire rack.
