Ingredients
Scale
1 (15.25 ounce) box yellow cake mix
½ cup creamy peanut butter
½ cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
¼ cup granulated sugar (for rolling, optional)
Pinch of sea salt (optional, for topping)
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, combine the yellow cake mix, creamy peanut butter, softened unsalted butter, and large egg. Mix until well combined and a dough forms.
Stir in the vanilla extract until fully incorporated into the cake mix peanut butter dough.
If desired, roll the cake mix peanut butter cookie dough into 1-inch balls. Roll each ball in granulated sugar.
Place the cookie dough balls about 2 inches apart on the prepared baking sheets.
Using a fork, gently press down on each cookie ball in a crisscross pattern.
Bake for 8-10 minutes, or until the edges are lightly golden. The centers of these easy peanut butter cake mix cookies may still look soft.
Remove the cookies from the oven and sprinkle with a pinch of sea salt, if using.
Let the cake mix peanut butter cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
For best results, use room temperature butter and egg when making your cake mix peanut butter cookies.
Do not overbake these simple peanut butter cake mix creations; they will continue to set as they cool.
Store leftover cake mix peanut butter treats in an airtight container at room temperature for up to 3-4 days.
You can add chocolate chips to the dough for an extra layer of flavor in your peanut butter cookies with cake mix.
