Ingredients

Scale
  • 1 (15.25 ounce) box yellow cake mix
  • ½ cup creamy peanut butter
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ cup granulated sugar (for rolling, optional)
  • Pinch of sea salt (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, combine the yellow cake mix, creamy peanut butter, softened unsalted butter, and large egg. Mix until well combined and a dough forms.
  3. Stir in the vanilla extract until fully incorporated into the cake mix peanut butter dough.
  4. If desired, roll the cake mix peanut butter cookie dough into 1-inch balls. Roll each ball in granulated sugar.
  5. Place the cookie dough balls about 2 inches apart on the prepared baking sheets.
  6. Using a fork, gently press down on each cookie ball in a crisscross pattern.
  7. Bake for 8-10 minutes, or until the edges are lightly golden. The centers of these easy peanut butter cake mix cookies may still look soft.
  8. Remove the cookies from the oven and sprinkle with a pinch of sea salt, if using.
  9. Let the cake mix peanut butter cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
