1 pound ground beef or turkey
1 onion, chopped
3 cloves garlic, minced
1 can (15 ounces) diced tomatoes
6 cups chicken or vegetable broth
1 head green cabbage, chopped (about 6–8 cups)
1 cup uncooked long-grain white rice
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon Italian seasoning
Instructions
Heat 2 tablespoons olive oil in a large pot over medium heat. Add the ground beef or turkey, chopped onion, and minced garlic. Cook until meat is browned and onion is soft, about 6–8 minutes.
Stir in the diced tomatoes (with juices), broth, and chopped cabbage. Bring the mixture to a boil.
Add uncooked rice, salt, pepper, and Italian seasoning. Reduce heat to low, cover pot, and simmer for 20–25 minutes.
Taste and adjust seasoning as needed. Serve hot in bowls.
