This Bruschetta Chicken Bake is a simple, flavorful, and family-friendly one-dish meal. It combines juicy chicken with fresh tomatoes, aromatic basil, garlic, and a tangy balsamic vinaigrette, all topped with melted mozzarella and Parmesan cheese, and a savory stuffing mix for a delightful crunch. It’s a perfect weeknight dinner that offers Italian-inspired flavors with minimal effort.

  • 6 Roma tomatoes, diced
  • 1/3 cup fresh chopped basil
  • 1 tablespoon minced garlic
  • 1/4 cup balsamic vinaigrette (or 2 tbsp olive oil + 2 tbsp balsamic vinegar)
  • 1 package stuffing mix (6 ounces), herbed or chicken flavor
  • 24 tablespoons water (optional, to moisten stuffing mix)
  • 1.5 pounds chicken breasts, uncooked, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 13″x9″ baking dish.
  2. In a large bowl, combine the diced tomatoes, chopped basil, minced garlic, balsamic vinaigrette, and stuffing mix. If the mixture seems dry, add water 1 tablespoon at a time until it reaches your desired consistency.
  3. Spread the bite-sized chicken pieces evenly across the bottom of the prepared baking dish. Season the chicken with salt and pepper to taste.
  4. Sprinkle the shredded mozzarella and Parmesan cheese evenly over the chicken layer.
  5. Carefully spoon the bruschetta-stuffing mixture over the cheese layer, ensuring it covers the chicken and cheese.
  6. Bake uncovered for approximately 30 minutes, or until the chicken is fully cooked through and the topping is golden brown and slightly crisp.
  7. Allow the Bruschetta Chicken Bake to rest for 5–10 minutes before serving.

Notes

  • If fresh tomatoes are unavailable, you can use 2 cans (15 oz each) of diced tomatoes, drained.
  • For a quicker preparation, cooked rotisserie chicken can be used instead of raw chicken. Reduce the baking time by 5–7 minutes.
  • To achieve an extra crispy topping, you can broil the dish for 1–2 minutes at the very end of the baking time.
  • This Bruschetta Chicken Bake can be assembled in advance. Cover the assembled dish tightly and refrigerate for up to 24 hours. Allow it to sit at room temperature for 20 minutes before baking.
  • The dish is freezer-friendly. Assemble, cover, and freeze before baking for up to 3 months.
