- 6 cups mixed greens or chopped romaine, well dried
- 2 cups shredded carrots
- 2 cups orange or mandarin segments, drained if using canned
- 1 red bell pepper, thinly sliced
- 1 large cucumber, halved and sliced
- 1 to 2 avocados, diced right before serving
- 1/3 cup toasted sliced almonds or roasted sunflower seeds
- Optional: 1 cup cooked quinoa or 1 cup chickpeas
- Healthy honey mustard dressing (see directions below)
- Lay down a fluffy bed of greens on a large platter or in a shallow bowl.
- Scatter on the carrots, citrus, bell pepper, and cucumbers. Add quinoa or chickpeas if using.
- Right before serving, tuck in the avocado and nuts or seeds.
- Drizzle lightly with dressing, toss gently, then drizzle a touch more if needed.
- Taste for salt, then serve right away.
