A colorful and refreshing salad packed with juicy citrus and crisp veggies, topped with a light honey mustard dressing.

Ingredients

  • 6 cups mixed greens or chopped romaine, well dried
  • 2 cups shredded carrots
  • 2 cups orange or mandarin segments, drained if using canned
  • 1 red bell pepper, thinly sliced
  • 1 large cucumber, halved and sliced
  • 1 to 2 avocados, diced right before serving
  • 1/3 cup toasted sliced almonds or roasted sunflower seeds
  • Optional: 1 cup cooked quinoa or 1 cup chickpeas
  • Healthy honey mustard dressing (see directions below)

Instructions

  1. Lay down a fluffy bed of greens on a large platter or in a shallow bowl.
  2. Scatter on the carrots, citrus, bell pepper, and cucumbers. Add quinoa or chickpeas if using.
  3. Right before serving, tuck in the avocado and nuts or seeds.
  4. Drizzle lightly with dressing, toss gently, then drizzle a touch more if needed.
  5. Taste for salt, then serve right away.
