A delightful and easy make-ahead breakfast featuring creamy oats and fresh blueberries.

Ingredients

  • 2 cups blueberries (fresh or frozen)
  • 4 tablespoons maple syrup (divided)
  • 2 cups old-fashioned rolled oats
  • 4 tablespoons chia seeds
  • 3 cups water or milk
  • 1 cup Greek yogurt (vanilla or blueberry)
  • 23 teaspoons vanilla extract
  • 1 pinch salt

Instructions

  1. In a bowl, toss the blueberries with 2 tablespoons of maple syrup and let sit for a few minutes.
  2. In a separate bowl, mix rolled oats, chia seeds, and a pinch of salt.
  3. Add water or milk, Greek yogurt, and vanilla extract to the oat mixture and stir until creamy.
  4. In a container, layer half of the oat mixture followed by half of the blueberry mixture. Repeat the layers.
  5. Cover and refrigerate for at least 4-6 hours or overnight.
  6. Serve and enjoy, garnished with nuts or additional fresh fruit if desired.
