- 2 cups blueberries (fresh or frozen)
- 4 tablespoons maple syrup (divided)
- 2 cups old-fashioned rolled oats
- 4 tablespoons chia seeds
- 3 cups water or milk
- 1 cup Greek yogurt (vanilla or blueberry)
- 2–3 teaspoons vanilla extract
- 1 pinch salt
- In a bowl, toss the blueberries with 2 tablespoons of maple syrup and let sit for a few minutes.
- In a separate bowl, mix rolled oats, chia seeds, and a pinch of salt.
- Add water or milk, Greek yogurt, and vanilla extract to the oat mixture and stir until creamy.
- In a container, layer half of the oat mixture followed by half of the blueberry mixture. Repeat the layers.
- Cover and refrigerate for at least 4-6 hours or overnight.
- Serve and enjoy, garnished with nuts or additional fresh fruit if desired.
