Biscuits and Gravy Casserole is the ultimate comfort breakfast. This layered, hearty, make-ahead dish is quick to prepare and kid-friendly, making it a great start to busy mornings and perfect for brunch.

  • 1 roll refrigerated biscuits, cut into bite-sized pieces
  • 1 pound breakfast sausage, spicy or mild, casings removed
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1/2 cup chicken or turkey stock
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese (optional)
  • 2 tablespoons chopped fresh parsley or green onions (for garnish)
  • 1 tablespoon butter (for greasing the pan) or use nonstick spray
  • 1 cup sautéed mushrooms (optional)
  • 1 cup chopped bell peppers (optional)
  • 1 teaspoon hot sauce (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch casserole dish generously.
  2. In a large skillet over medium heat, crumble the sausage and cook until browned and cooked through, about 6–8 minutes. Drain excess fat if needed.
  3. Push the sausage to the side and melt the butter in the same pan. Sprinkle in the flour to form a roux and cook, whisking constantly, for 1–2 minutes until a pale golden color forms.
  4. Slowly whisk in the milk and stock, continuing to whisk until the mixture thickens and becomes smooth. Stir in garlic powder, onion powder, and a pinch of salt and pepper. Let it simmer gently for 3–4 minutes, then taste and adjust seasonings.
  5. Stir the cooked sausage back into the sauce. If using cheese, fold half of it into the mixture now.
  6. Spread a layer of biscuit pieces in the bottom of the prepared dish. Pour the hot sausage gravy over the biscuits, top with the remaining biscuit pieces, and press gently to soak up flavor. If using cheese, sprinkle remaining cheese on top.
  7. Bake in the preheated oven for 25–35 minutes, until the top is golden and the sauce is bubbling around the edges. For a crisper top, broil for the last 1–2 minutes, watching closely.
  8. Remove from the oven and let rest for 5–10 minutes. Garnish with chopped parsley or green onions before slicing. Serve and enjoy with extra gravy if desired.
